The Bakers works a stone oven, turning out manakish on flatbread in zaatar, cheese, muhammara, spinach, labneh, sujuk, beef, falafel and halal pepperoni, plus deluxe two-layer versions built for sharing. Its Syrian maarouk is the other signature: soft enriched sweet bread filled with pistachio paste, chocolate, dates, coconut and raisin, koshta with honey, or the Dubai chocolate blend of pistachio, chocolate and kunafa. Boat-shaped shamyat pastries, mini fatayer in nine fillings, fatteh and ful plates and a coffee counter round it out. The Ridgeway bakery on Platinum Drive in Mississauga opens early and runs to ten.
